The worker would have smashed the grapes with their feet in this small tub. The juice would flow out the opening and into the carved hole.
Crushing grapes with the feet meant the juice would be squeezed out of the grapes but the seeds would not be crushed. The crushing of the seeds would make the wine bitter.
